Freakin Awesome (and easy) Yellow Curry

My two favorite kinds of food? 
Easy. 
Mexican and Thai. 
Seriously, they always sound delicious to me. I've made plenty of Mexican dishes in the past, but this recipe was my first attempt at a Thai dish. Don't be intimidated by the Asian awesomeness, it was seriously soooo easy to make. Just follow these few(8) simple steps!


Step 1. Put on the new Strokes album at a reasonably loud volume (trust me, it helps the food come out better)


Step 2. Gather your ingredients:
11oz bottle of Trader Joe's Yellow Curry sauce
14 oz can of coconut milk (you'll only use 1/2 the can, so if you find a smaller one, that would work too)
1 chicken breast
1 carrot/6 baby carrots
2 small russet potatoes
8oz can sliced pineapple
1 cup white rice

Step 3. Cook the rice. For 1 cup of rice, you'll need to boil and then simmer it with 2 cups of water. 


Step 4. Cut up the chicken into 1 inch cubes and cook thoroughly (I just boiled 
mine)


Step 5. cut up carrots and potatoes(peeled) into bite-size pieces and boil until tender. 


Step 6. Place chicken, carrots, potatoes, and pineapple(cut into bite-size pieces) in a large sauce pan


Step 7. Pour jar of curry sauce and half can of coconut milk into a medium-sized mixing bowl and stir until mixed well.*You may add more or less coconut milk depending on how spicy you like your curry. Then pour over step 6 and simmer for 2 minutes.


Step 8. Serve with the rice and love me.

  4. girl before you leave we MUST go to this thai restaurant...a guy my dad is a counselor with in your sister's ward..has a sister in law who owns a thai restaurant in chandler and it sooooooo good!!! mmmmm. Love me some thai food. and not because I'm asian LOL! Yours looks good. baby poo yellow and all :)

  6. I was buying paint at Home Depot today and what you call "Baby-poo-yellow", Martha Stewart calls "Dried Chamomile." Guess you're not quite ready for that primo paint-naming job.
