HOMEMADE // Granola

One of my roommates in college used to make this granola all of the time. It's my favorite. On days she made it, our whole apartment would smell like warm maple goodness:)

Ingredients
3 cups rolled oats
1 cup slivered almonds (this time, I did half almonds half pecans)
3/4 cup shredded sweetened coconut
1/4 cup + 2Tb brown sugar
1/4 cup + 2Tb maple syrup
1/4 cup vegetable oil (this time, I used olive oil and it tasted the same)
3/4 tsp salt
1 cup raisins

Preheat oven to 250 F
Mix oats, nuts, coconut, and brown sugar in a medium bowl
In a small bowl, mix syrup, oil, and salt
Pour liquids into the larger oat bowl and stir until evenly combined
Spread evenly onto a cookie sheet
Bake for 1 hour and 15 minutes, stirring every 15 minutes
Let cool and then transfer to a bowl and add raisin

I love to just eat it right out of the bowl, but you could also enjoy it on top of your favorite yogurt, add milk and eat it as cereal, or as an ice cream topping:)

    1. Oh, you're the best! It always kinda bothered me how much oil and syrup were in this recipe (but then I'd start eating it and totally forget)
